How much mirepoix?

Worked cleanly and hygienically. Crisp rosti. steak cook correctly and everything well seasoned

Sauna anybody?

Well seasoned dish. potatoes cool. Bacon had rind on and look messy. Steak well cooked.

good knife skills

Mushrooms needed to be ground to a dust. Steak slightly overcooked and peppery. Good tasting vegetable and potato. Good flavoured sauce.

Sauce hidden by dish. Vegetable lacked flaovur and seasoning. Well cooked steak. Rosti lacked colour as pan was too cold when frying it.

Are these julienne or batons?

Potatoes bland and lumpy. sauce over reduced. Steak well cooked, and vegetables still crisp.

How much vegetable prep have it to do?

Excellent dish. well cooked and seasoned steak, well flavour potatoes and bacon, good sauce and well cooked and flavoured vegetables.

I wish I had small fingers.

Well trimmed steak, but served very rare. Vegetable barely cooked and potatoes lacked garlic flavour. sdauce bland.

Is it over yet?

Too much vegetable prep. Stack too large and lacked flavour, but they were all well cooked. Steak still rare and sauce too thin and lacked flavour. Lots of skills shown and a very imaginative dish that need more time.
